They conquered the whole country, installed an Austrian dude as emperor and then were pressured by the US to leave, after which the Mexican imperialist got overthrown
If the Mexican resistance had kicked the French out, I'd consider France lost, but it didnt happen and France left despite being not being defeated militarily to appease their relation with the US that had just defeated the Confederate States.
If anything, the US defeated France (diplimatically), but not the Mexicans

Another special case.
North Vietnam was thrashed militarily by the US. The problem was that South Vietnam (whom the US was supposed to be simply supporting) just couldn't get their shit together, and by the time American strategists realized that they would have to actually invade the North themselves to win, it was no longer politically palatable.
It's not necessarily WRONG to say North Vietnam beat the US, it's just that their victory didn't come from military success against the Americans.
