The problem with lacking beasts of burdens isn't just the getting things to work for you part, it's also that you lacks an amble supply of meat ((Heard theories the Atecs turned to human sacrifice because the upper classes needed the meat)) and that you won't have diseases develop at any majoir rate. While that may seem like a weird thing to complain about it will lead to you getting close to wiped out whenever strangers from other continents with beasts of burden sneeze at you with you only being able to spread some disgusting sexual disease to them.

That's not why they practiced cannibalism. They had plenty of sources for meat. They had a lake full of fish, there were rabbits, deer, peccary, duck, turkey, snake, dog, even insects. If they need extra protein they have maize and beans plus nuts.

Aztec religion, along with most Mesoamerican cultures prior, hosts a pantheon of gods that revolve around sacrifice, death, rebirth, etc. It's a connection to sacred power, but it just happens to be an extreme version.

Also, Mesoamerican diet was dependent on mostly plants with some birds and deer mixed in occasionally. Maize, squash, beans, and jalapenos were the four primary crops, birds were rare, and deer were uncommon meals but there were large populations in the Valley of Mexico.
