Crusades especially to the Levant are fucking pain in the butt. Half your army die on the way and if anyone decides to fuck you in the ass while you are out crusading, you have no way to defend yourself. And then even if you win and get the Kingdom of Jerusalem created, Ayrabs will jihad you every 10 years and you get zero help from Europe.

Most of them came from France and the muslim generalized it to all of them by calling them "franks" (aka the name French refered to themselves with in that era)
Past the 9th century (and the division of the Frankish Empire in 843), "Franks" basically means French
Germans (the former Eastern Franks) had already found another name (Deutsch) to distinguish themselves
