What's a good book/resource for learning about the crusades? I have a general understanding of them but I want to go more in depth.

Thomas Madden's The Concise History of the Crusades.
Real Crusades History. This will piss off /leftypol/ but he is extremely knowledgeable and has other academic historians on as guests all the time. Very in depth.

He frames the narrative in a way which is not apologetic to Muslim aggression/imperialism. This is considered politically incorrect. Many of the crusaders were no angels but neither were the Muslims.
The Crusades: The Authoritative History of the War for the Holy Land by Thomas Asbridge was recommended to me by historians.
