Considering that both Latin and the various Germanic languages had case systems, why weren't they preserved in modern Romance languages?
On a similar note, why and when did french begin to nasalize vowels and drop the final consonants?

Grammatical cases exist in Romanian
Because the cases were indicated by suffixes and those final sounds tend to drop. As a result, languages develop other features such as articles, prepositions, etc.
