Say I'm a complete weeb and need to find the best available translation of the Kojiki and Nihon Shoki one can find in paperback. Which edition would you suggest?

You learn Japanese. That is literally THE best way to pick up reading another language - you find the biggest book you can and don't stop until you understand it. Simply bang your head against those books in their native tounge with study guides and translations guides next to you.
Reading translations are cancer - while a neccessary evil sometimes one should always aim to read in the materials native language.

Even if I did it would be adaptations from the original sources to modern Japanese, which it wouldn't be much differed than straight up reading a translation.
