The star and moon isn't a Muslim symbol. Muhammad never used it. Early Muslim societies never used it. Their flags were mostly colored banners, sometimes with Arabic writing on them. (e.g. something similar to the Saudi Arabian flag, or the ISIS flag.)
The star and moon was mainly used by the Ottoman Turks. There are a bunch of theories as to where they got it. It might have been a symbol of Byzantium, it might have been an old Turkic symbol, it might have been something else. (this is why it was allowed to remain on the flag of Turkey after Ataturk's reforms. A notorious secularist such as him wouldn't allow a religious symbol to remain on his country's flag.) The only reason many Muslim countries use it on their flags is because of the influence of the Ottoman Empire.

As for Saint Jerome's translation of Χαῖρε kεχαριτωμένη into Ave gratia plena, it is perfectly correct since the root word of the greek word kεχαριτωμένη is χαρις which means grace. The american protestant translations you posted are very loose.

The text is extremely clear. Grace refers to Mary, she is "graced". She has grace. That grace is from God. That grace makes her without sin. The angel CALLS her that, because that is what she is. The angel is speaking the words of Our Lord. Our Lord with "Mary full of grace" reveals to us her nature and purpose. To be blameless for God.
