You should look up the songs/ballads of Thibaut of Champgne. He was a crusader who upon returning to Europe, dedicated himself to writing song and poetry to be performed with the accompaniment of music. He's pretty good, and most of his works are up on YouTube, and the interpretations are pretty faithful to how they would have been performed (or so I've heard).

A little cliche, but the Epitaph of Seikilos (sp?) is actually a really beautiful piece that feels very immersive.

Is there any recorded medieval Islamic music? I've seen Ottoman marches, but nothing else.

I don't mean those generic 'medieval Arab music' things you find on Youtube. I mean specific medieval compositions with notations. Stuff like the Seikilos Epitaph or La Messe de Nostre Dame, but Islamic.
