Air cooling runs between 50c-80c
Water runs at 20-30c

It depends on the composition of your loop. A 240mm radiator will cool your CPU about the same as a good tower cooler, but if you add a 360mm radiator to the loop there is way more dissipation of heat. But the big advantage of watercooling is being able to cool your GPU. It'll bring your GPU temps down 20-30 degrees.
So while watercooling isn't really worth it for a CPU, it's definitely worth it for a GPU. And now with EK's aluminum line it's actually pretty affordable.
