those such as arch uses command line install method and bascially only install the base system, it doesn't even come with a desktop environment, when you finish installing it is just a terminal screen, so it is by stock as empty as it can be, and who chooses every single program to be installed is the user.
in those such as ubuntu, a lot of programs comes pre-installed, lots of tools etc., so it has by stock lots of packages (thus, being more friendly and 'just werks out of the box', you can just istall it and use it)

I'm running Fedora now and it started with about 1.4k packages and a Gnome DE. I installed i3 window manager instead. After I did that and got all the packages for the stuff I actually use (which really isn't much) I ran up to 2200 packages.

Runs flawlessly on my 2014 MBP retina, got i3wm-gaps-next installed too, 6 months - no troubles. You'll need broadcom-wl driver installed for wifi to work on this particular Mac, I've went one step further and ordered Broadcom BCM943602CS wifi module. This one gets supported by Linux kernel out of the box with actual open source drivers. Way more stable Wifi reception.
Overall there will be quite a bit of tweaking here and there, like preventing your mac to wake up when lid is closed etc.
Get mbpfan, tlp and powertop services running, suppress GPE06 interrupt and you will be golden.
Couldn't be happier, started learning vim, fell in love with term apps, ncurses. Oh, and get qutebrowser installed, you will finally understand what happy browsing really means :)
