the school can still see your packet headers and remote view your desktop. the most private thing you could do is use your phone as a hotspot and unplug the ethernet cable

They do this on public wifi, they have a custom cert for everything until you go to a unencrypted site, then you accept their terms and you get to use the certs from the sites you visit.
