My college uses Xubuntu LTS. They themed it's UI a bit so it looks like windows so users don't get confused since a lot of our programming courses are on windows.
Xfce is the best DE imho especially with stability, but doesn't look impressive by default.
GNOME or KDE are probably what you're looking for, but I'd still go with Xfce. KDE Plasma is unstable outside of openSUSE, and GNOME's UI is a bit tablety plus it's a bit heavier. Since KDE is only impressive with it's other bundled software, which I doubt your students will interact with, if you were choosing between those 2 pick GNOME.

For GNOME you should use Fedora. Or Ubuntu, but they've recently switched to GNOME as the main DE and are switching to wayland just now so there could be issues.
Just remember to disable persistence so the OS resets itself on reboot if your students to something crazy with it. Also, have them log in as guests and prevent any admin privileges.

Don't go for hackershit. When a tiling WM isn't used by an autismo there isn't even anything to show.
If you want to impress them, make a GNOME Classic or KDE setup. Rice it a bit, make sure the fonts are properly rendered (use Ubuntu if possible) and check that the hardware's official GPU drivers are installed. Add some eye candy effects, just enough not to be annoying. They'll quickly notice how much better it is than XboxTabletOS; if they are used to MacOS, consider GNOME Shell instead.
