Do you think Google has captchas, especially here on 4chan, so they can see which threads we're replying to/creating?

Google didn't "ask" for 4chan to have captchas, 4chan asked them and Google of course said yes (more data to sell).
Google's domination is completely consensual, else they would break the NAP and get nuked

your personal 4chan page history doesn't make them any money, and something like that would be very easy to find out/block.
captchas are adopted by a company as a cheap way to block bots. google, in return, gets free labor to sort and read images for something they are working on. captchas are the reason that many books are available in electronic format. right now it's being used to help self driving car AI.
