Is there any way I can do this with the bare minimum resources? Like maybe an ESP8266 downloading files and saving them to an SD card over SPI maybe? Any suggestions? I'm ready to get my hands dirty

I've never actually used an ESP8266 but from the description on their website it sounds like what you are looking for.

Why not just use the cheep options if you already know how to do it on a pi and a phone whats the point of going out of the way to use this tiny controller... save yourself some time and hassle and just use the pi atleast you can reuse it for other things later on if you no longer need it..
