2007 seems like a good option, my personal experience is that 2010 still works like a champ without any issues. Even from a development standpoint, working with the staples like Word, Powerpoint, Excel has not changed that much since at least 2010.

In fact, I know people to this day who are still using 2010 in a professional setting, simply because there is virtually no reason to update.

It's stable as fuck. Its only problem is that it doesn't open MS Office files properly and that isn't its fault at all. Microsoft intentionally misimplements its own "open standard" so that files made in MS Office openly open properly in MS Office.

If you use LibreOffice with odf only it works flawlessly.

One thing about versions newer than 2007 is you can have two workbooks open side by side more easily in the same instance, which means pasting special between two books is a lot easier. Usually that would be a sign of an inefficient workbook, cuz alt-tab should be enough. So if it's just your hands on the material maybe 07's fine, but working with spreadsheets created by boomers 10 years ago, I'd be a hell of a lot happier with something newer than 07. At home I use 16, which has dictionary definitions in it's right click menu of word, so I would hazard there's some botnet somewhere in there.

2007 is okay if you can tolerate shitty modern user interfaces. If you want a UI that's actually good and customizable, 2003 is where it's at. I believe there's also some sort of compatibility pack that allows you to open 07+ documents in 2003, but don't quote me on it.
