You can be a stenographer using pen and paper too, it's just more convenient to use a typewriter or computer and in addition knowing touch.

But actually, stenography is a dying field, as modern autocompletion and especially speech-to-text software is far more convenient.

Touch typing is a technique where certain buttons are supposed to be pressed by specific fingers. I can type on a keyboard without watching using only two fingers, it wouldn't be touch typing but it would be typing without looking.

I see. I only use max three fingers for hand to write and I have a vague idea of where the keys are so that I can still try to type what I want and have an idea of where the keys are even if there is no keyboard in front of me (ex: typing on a table as a joke)

touch typing is when you type without touching your keyboard. you need to be level 30 or above to acquire that skill
