I have 2 usb2 flash drives and I was thinking is it possible to merge them (raid0 style), to improve the read and write speeds, and use them as a single faster portable flash drive that just takes up 2 ports?

Depends on the hardware, on cheap laptops for example most of the time, the port next to each others are just a part of the same bus, so the bandwidth is shared between two peripherals. Your best bet would be to use two usb ports on separate sides, so you'll need extension cords.
As for the actual raid configuration, I have no clue.

What's the point? The limitation of cheap shit flash drives is usually write access time, not linear throughput.
