It depends on your use case. I have an established set of software which I use on a daily basis.
When I had been using Gentoo, only installation of the main system and my preferred applications took a time. I just launched my install script for a night.
The regular usage didn't feel any different from a distro with pre-compiled binaries. But if you're going to install every other day new software like Arch-schoolkids do, you probably won't be happy with Gentoo.

There's actually no big difference, when you're installing the system, it will compile a lot of packages and it doesn't matter whether it'll take 10 hours of 5, it's already long enough to just put off the machine for a night.
While you're using the system, all updates can be put in background and some single installations don't take lot of time.
