Depends on the kind of work that you are doing. If you're writing a scientific paper for example it helps to have two monitors where one monitor to do your research, read the references and one monitor to write down the report. Of course it also depends on the size of the monitor as well. If you have something like 50 inches large then one will be enough I think.
