You don't have to use solder paste there like he did but there are some really small SMD devices where you don't have much choice other than using paste because using flux and solder seperately for small components could damage nearby components more easily and eould require more precision.

But you don't do that often. I've done that only once before on something relatively useless and I am not keen on trying again if it involved something valuable I wanted to fix.
