About 6 years ago, I had the general impression that the Apache foundation was respected. Nowadays, I virtually hear nothing about them. With all the FOSS fags here, why isn't it mentioned more here? Is there some RMS redpill on Apache that I do not know of?

All of them are still used and important, just not as popular as simple http servers. In that regard nginx is better. Cassandra and Hadoop are only for those very few that need big data (true big data, not some buzzword-tier SQL db with a million rows), that's why they are usually heard about only among experts.
