Sick of the high temps and CPU usage from doing 1 thing on the 7700k. I can easily sell my motherboard and CPU to make the switch to Ryzen. Would it be worth it? I am planning to do thing other than gaming.

If it scales well across threads, yes. Especially on FPU heavy workloads.
If you need maximum single thread, stick to Skylake.

I don't know much about Adobe shit, but Blender and x264 will do well on Ryzen.

Is there much difference between the R5 1600X and the R7 1700?

Well it's two cores less, so of course it's going to affect things.
In terms of Adobe, Ryzen might be a slight downgrade depending on the software used. I know Photoshop doesn't scale too well, but things like After Effects do.
