You have to know tour hardware. Also you just do it once, then copy the configuration for kernel updates.
It's easy after the first time.Also just use the fucking kernel wiki to search for your hardware and check what drivers you need to enable.Also if it's not on the wiki it's on the docs that come with the kernel source, just learn to use grep to search through all the docs for your specific hardware.

boot with arch install iso, check what modules are loaded, replicate in your own config. use make nconfig and search function to find the fields that you are missing.

you can modify it to only support hardware you only need, which makes it alot less bloated. it usually has all these drivers

Read the gentoo wiki for "essential" things,
lspci and install all the drivers you need
get all the extra suppor you need
then look through the list and read things, most things say "If unsure leave ticked/unticked"
