Lol, you have no idea what massive amounts of data are stored in some sql servers. If you got competent people working with the platform running windows is fine for something like paypal. Redhat would also be fine ofc, if you turn off all bullshit services in windows server you can make it pretty stable. Just load balance it across alot of servers, it doesn matter if 1 catches fire.
