How safe is it to access sensitive information like email and banking through your phone? Can someone explain how phone networks work compared to a wlan?
Cellular radio. All https traffic is encrypted anyway so you're relatively safe either way

I'd say "not very safe at all" because phones are inherently harder to secure than computers. Android especially is a shitshow. It's made worse by the fact that Google and Apple try to lock you into their walled garden, and push you into rooting/jailbreaking to have any control over your own device, after having based their security models on your not doing that.
Also it's easy for your phone to be lost or stolen, which is both a security threat ("Hey Tyrone, I found this iPhone and the passcode was 1234! smdh pham") and a way to lose access to an important service at an inopportune time.
