Rip out the wifi chip?

Unfortunately I don't think that is much of a solution. Opening your meter usually absolves the company of any liability if anything happens, like the meter burning down your house.
I think there is also fines in most countries if you tamper with your meters, and if you rip out the chip the utility probably won't be able to read your meter remotely anymore, so they will come and see what is wrong and find you have fucked with your meter.

Technically it's illegal to tamper with your meter so making sure your energy supplier is using secure communication protocols is the only way.

How about blocking it? Set up a cage to block signals from leaving. Same end result as ripping out the chip but with no damage

Still face the problem of

You may not have tampered with the meter but it will still be an issue.

You could block it if you want, or just ask the utility provider to remove it.
At least in the UK it's not mandatory.
