Get cheapest MLC SSD that will be unused in 30% (this is the amount of space that should be always free). You clearly have no requirements for the transfer speed and other shit like that, so don't bother with PCIe drives. You won't get any benefit from it.

SATA is a normal hard drive data lane, it tops out at 6Gbits/s
NVME is a much faster connection, it requires PCIe data lanes instead of SATA, your average M2 PCIe x4 slot tops out at 32Gbits/s (the fastest NVME drives top out before that though)
You could get tripled speeds by spending double the cash on a NVME drive, but SATA is good too and will still be fast

SSDs can work at higher speeds than SATA interface can provide: 6.0Gb/s.

It's better to connect an SSD over a faster interface, m.2 is a modern connector which allows to use either SATA or PCI-e interfaces.

Oh yeah I don't want to go overboard with my budget. My new SSD/HDD budget is max 280€ Maybe 300 if I can find some really good stuff. I'm not super prissy with transfer speeds, 32gb is a vast improvement but I'm fine with 6gb just as well. My current HDD is near 10 years old and showing its age.
