This might be a huge mistake, but I'm actually going to ask /g/ for career advice

I'm a software 'engineer' at a really chill mid-sized company. It almost feels like a startup except it's not and we have actual job security.

I'm part of the research / innovation division, which means I mostly deal with new technologies and I'm often part of building 'exciting' prototypes for big clients that are displayed to the press on show floors. Also building production grade software using cutting-edge technology, that kinda stuff

Now I love this job as it's pretty much the complete opposite of the worst-case pahjeet code monkey scenario

However since I'm dealing with a shitload of different technologies and languages ("full stack" is a joke compared to what we're doing) I can't really specialize in anything. So I have a lot of different skills, but I don't ever get to really go deep into a certain area

Am I going to be completely fucked in job interviews should I ever lose this job?

I can do mobile frontend, but I can't compare to mobile specialists. I can do enterprise backend, but I can't compare to backend specialists. I can do data science, but not as well as actual data scientists. I can into computer vision, 3d graphics, VR and so on, but I'll never have as much expertise as people who specialize in only one of those areas

wouldn't you have to build those skills in your free time? I've never tried it myself so I don't know how good it is but maybe checkout udacity nanodegrees

Your work experience is worth as much as you can sell it for. Assuming you go through HR it all depends on how much you can impress your future boss with knowledge you have picked up previously. Figure out what your job has taught you and learn how to put it into words, make sure it's interesting and exciting.
I think you should be more than fine, sounds like you are doing something actually demanding that helps you grow. If you ever get asked something like "Yeah but you didn't get to use C# much and that's what we are looking for" follow up with something about having experience with other similar programming languages, experience in developing in team and so on.
Basically what I have learned from my interviews is that most important thing is how good you are at making an impression and selling yourself. Might be obvious but that's the truth.

If you talk a big enough game in your resume and cover letter stressing your work in that field, and you at least know what you're doing, you don't need to have deep expertise to get most of the jobs available.

If anything, your job is doing better than most at preparing you for the market, because you can act like you specialized in anything.

Learn to document your work in a way that does not take a lot of time away you, so you can still complete projects as you are currently doing it.

You say 'engineer' in quotes does this means you are not an engineer, but you are working as one?
I know the term is very watered down in America, here it means you have completed an engineering degree, but since your education is radically different, it might not mean the same to you.

When it comes to seeking new employment, your CV should reflect what you have been working on.
If you have only worked a single place that does a lot of consulting work where you basically show proof of concept, mark each of these down as a single job.
This way, you can highlight specific skills and show that you know some fields to the extend that you can use it to make these projects.
Seeking employment somewhere where they specialize in one thing is not always bad if you are not already an expert in the field.
A good work ethic and a proven ability to learn the field is most likely what they seek anyway.
I have made a lot of projects in fields I knew nothing about when I started.
But because I am an engineer, I know how to study those things and improve my knowledge while I work towards a finished project.

Be honest about what you can and cannot do, but don't feel like you need to be humble about things they might want to know.
There will always be someone with more experience and less of a social life than you, so just apply for the jobs you want and see what it brings.
I know there is a lot of inidan jokes on this site, but there is some truth in these memes.
There is a lack of qualified people, and companies need people so badly they import people to fill the jobs.
A lot of these people are just hoping for something better than the shithole they come from, but that does not make them good engineers.
Being better than those people is not a high bar.

I'm in a similar situation. Here's the trick: when you are applying for a job, only focus on the relevant skills. It sucks, but most people don't believe that people can be good at more than one or two things. So present yourself as a specialist in whatever they need, and make sure you know your shit when it comes time to talk about it. All your other skills can be a surprise for when they become relevant. But during interview time, they'll just dilute the relevant experience.
