What books can I read and takes notes from in order to understand GNU/Linux?

In what way? Do you want to be a power user or just a normal user? Because you don't even need a book for daily use, and even for advanced stuff just a youtube video is enough.

It just seems like a monumental task to even install ubuntu lts and run morrowind through wine for someone who has only been using windows and knows nothing about how operating systems actually work. Also if I read a wiki or watch a video I'll be easily distracted so books are preferable.

Oh, you mean wine. Yes, that is something you can use youtube for, tons of videos. Also a quick search in google and you can install what you want.
But yes, WINE is as complicated as a Windows, with their DLL and shit. I don't use WINE unless I play a visual novel but those were no challenge.
