From an audio and visual point of view, is it actually an issue to coil or group cables up? does it impact performance is certain cables are placed in close proximity together, such as, a power cable and a audio/visual cable?

This, most common issue is you'll hear a 50hz or 60hz interference, if there's a cable coming out of the main in AC. Guess why
With the XLR, given you're using balanced source the problem is strongly reduced.

If it's already coming out of a power board then it's low voltage DC, there will still be interference but not that much. And again, the XLR input will mitigate the issue

No you won't get any harmful interference with XLR
Yes you can with unbalanced or unshielded cables (try running RCA more than 30' and you'll get it)
