Did you know that due the VHS unstability you require of professional equipment to get proper results? You need properly aligned High-end S-VHS decks, timebase correctors, proc-amps and detailers to get an acceptable and stable source for the capture device(they're picky and will drop frames or stop capturing at the slightest dropout). Furthermore once it's digitized you may need to apply additional filtering before having a proper master for MPEG-2 encoding.
SLP/EP tapes are the hardest ones to digitize, as only the original deck that recorded it can play it without drops or tracking issues.

Yeah it'll be SD at best, but there's absolutely no reason to use mpeg2.
