I'm just going off of what I've heard. I want to wait for Threadripper, but so far it seems like it's going to be at least $850 for the top one, so I may as well just go with just a 1700X or a 6900K since I don't do shit like SLI--but I do have an M.2 PCI-E SSD. Will the 1700X slow it down? It doesn't have too many lanes.

Not at all. In fact even the cheap A320 AM4 motherboards give you full x4 lanes (4GB/s) for an m.2 SSD + x16 lane (16GB/s) and more.
