What laptop options do I have if I want to avoid Intel? Having a hard time finding anything made within the past few years.

It's not that they are worthless, they just can't really compete in the CPU department. Bristol Ridge changed that somewhat (CPU somewhat at the level of a Skylake i3 but with a better iGPU), but it's probably better to wait for mobile Ryzen.

You can get HP EliteBook 755 G4, 745 G4, or 725 G4 with AMD A12-9800B,
They are decent but can't compete with Intel other than with their lower cost.
Just wait for mobile Zen APUs.
