What laptop choices do I have id I want to avoid Intel processors? I haven't had much luck searching. Do they have a monopoly on laptops?

Your option is to get a Chromebook like the Samsung Chromebook Plus and put Linux on it via Crouton.

Asus is making an Ultra Gaymen Laptop with Ryzen

I'm going to get that as soon as it gets released in non 8 core edition

You are pretty limited, but many laptops do have at least a token AMD edition available
