So I've started tinkering around with overclocking my CPU and I'd like some different stress tests to throw at it to check stability/temps. Right now I'm running RealBench. It's an i7-6700k @ 4.6ghz 1.312v, and it hasn't gotten over 55*c

Nice whip. Prime95 is like the gold standard but there's also stuff like Cinebench out there too.

Any idea which of those two would be more demanding? Or is 100% CPU usage going to have the same effects regardless.

Prime95 will just keep running and running stressing the CPU for as long as you want it to.
I have a 2012 g37x that I'm a few payments away from fully owning. I'm a sucker for BMW's style but the weeb in me wanted to get a Jap car and I got nervous about BMW reliability. I think I'll try to pick up a 7 series with the long wheelbase as my next car in a few years though since it appeals to the old guy growing inside me.

This is what I'm at right now. It ran 15 minute test with no problems, but I can't tell if it was just an easy test.

The old line of thinking was to run Prime95 for like several hours before being able to comfortably declare your system "stable" but realistically, at your clocks and voltage, that's probably overkill. Your clock and voltage isn't too crazy so you're probably fine especially because you haven't crashed yet.
If you wanted to shoot for lower temps you could start dialing back the voltage little by little.
