OP, you can disable Windows Defender completely through group policy, or at the very least, disable real-time protection (the shit that is causing the disk and cpu usage). Google for it.

What is your point. Windows N versions have always been available to europoors because of some bullshit lawsuit regarding "media player monopolies" or some shit. Literally all they are missing is media related stuff, and you can enable all of it by downloading the feature pack, which most users do.

The only reason that it is available is because Europeans hate corporations and love commie bullshit, and whenever they get wind of a single corp including a single media player as the standard in its OS, they get a raging red erection and have to STOMP IT OUT.

tl;dr there is no fucking point in installing N versions. If you don't want the preinstalled programs, you can remove or disable them through other means.

My laptops internet is fucked, if I move it an inch the internet shuts off and it can't be fixed even by opening it and shit. The battery life is shot, I get 2 hours with internet on and brightness to lowest and the colors are a little messed up.

I don;t think you can automate GPedits unless you use domain joining. It's a five minute job that is done once. You're making it sound like it's the hardest thing in the world to double click on a selection.
