no expert, but I think you'd be fine if you just write the true temperatures. Contact a lawyer if they try to fire you for it.

Reminds of the time I worked at a packaging factory. One time, I noticed that the bottles weren't passing the pressure tests and notified my supervisor, but he just laughed it off and told me to find the bottles that past the pressure tests. But it was me who had to sign off the tests. If a customer complains, it would be my head on the chopping block. The only reason he didn't want to stop the machines was because it would take a lot of time to reconfigure them. I'm not sure if it cost me my job. They never mentioned the reason I was let go, but I was glad when it happened. Luckily, I managed to find a much better job a month later.

log the temperatures honestly and write very detailed accounts of your professional opinion on the matter. be 100% honest. get consultations with lawyers ASAP. if you get a lawyer now they will be able to advise your much better than a bunch of fat nerds on an anime porn website. if they fire you it will be a slam dunk case and lawyers will be licking their lips over it

The fuck are you doing? Quit.
While everyone's recommending a lawyer, in your shoes I'd also look into the resources available from your Department of Labor (or whatever the equivalent is in your state/province/country). While a private lawsuit can be thought of as a fight, the DoL coming down on an employer is a one-sided beat down with the authority of the State behind it. Not guaranteeing it'll work out in your favor but you are paying for it with your tax money.

1. talk to a lawyer now
2. make verifiable backups of all communication between you and management. just saving the emails will not be enough
3. report the temperatures honestly
4. frequently voice your concern about the matter via (verifiable backed up) emails with management (i.e. weekly). make it clear that the temperature discrepancies are of critical importance and could cause havoc on the company if not fixed (make it about you trying to "save the company" rather than to cover your own ass)
5. continuously send these (verifiable backed up emails) to your lawyer
6. if you get fired or scapegoated, give your lawyer a call and fuck this joke of a company in the ass until their money falls right into your pocket

Report the temps honestly anon. The company wants you to cover for them, but they'll have zero problem scapegoating you when they get caught. Also email upper management so there's proof you voiced concern should anything happen.

>>upper management says "just make it work"
Ask upper management for the company credit card.
Fix the problem.
If they complain, shove "just make it work" in their face.

>great, now I'm going to get fired for refusing to falsify records
You know there are laws that protect you against that.
