I'm looking to switch to Linux and some recommendations for an ultra minimalist and clean setup would be nice. Preferably a command desktop and clean file manager. I'm open to all setups and distros

Serious suggestion; install Ubuntu minimal, then add whatever WM or DE you prefer. I recommend i3 if you want tiling or OpenBox for floating.
Ubuntu because best package selection and well supported by projects not yet in repos. Minimal really is minimal. More minimalistic than Arch base.
Ubuntu MATE is what you want. Don't listen to /g/ and avoid Xfce at all costs

You can't have a minimalist setup without cli, so Archlinux with i3.
If you want a distro that provides everything OOTB go for Fedora with GNOME. You can also use Ubuntu, which has a broader community support (install instructions are usually given for Ubuntu by default), but there are reasons to not trust Canonical; and Linux Mint may be broken.
