I don't modular because it's really inefficient for the time. I just use cv between stuff for mostly envelope shaping. Been looking at getting a mother32 and system500 just to have something available though, plus they would fit pretty well into everything cv capable already. I still think big modulars are a meme though.

Eh, difficult to say there's a specific size. I would put it down to functionality. There's some modules that seem generally useful by themselves, like I'd be fine with a bunch of extra processing tools such as the Intellijel Rainmaker or other "unique" effects units that have modular inputs. Not totally sold on getting things like a half dozen filters. basic vco units, simple routing modules, or sequencers though. It would definitely make things more accessible to use, but not knowing if I'll get something I like out of an afternoon can be both frustrating and scary at times. I have a decent selection of outboard gear already, so I'm probably biased.
