What distro should a beginner use?
Mostly for things like LaTEX, Python, web browsing and music.
Just go with mint or ubuntu
I'm pretty happy with mint.

Although everything you listed works perfectly natively on Windows.

Pick the spin of Ubuntu that looks most convenient to use for you. Doesn't have to be mainstream Ubuntu if you don't like the default desktop environment. Xubuntu is a popular choice around here, but you might want to look into Ubuntu GNOME since Shuttleworth said they're making the next Ubuntu LTS a GNOME distro.

I like Antegros. Its arch linux, but most of the hard part, which is installation, is taken care of. However, the arch wiki is amazing, pacman and the AUR are great resources to avoid compiling things yourself.
I know its weird saying this about an arch based distro, but "it just werks". Its actually great.
Mint
It's very unlikely that somebody will present a convincing argument for anything other than Linux Mint or Ubuntu
Personally I went for Mint Xfce because it's fast and clean
