Is wardriving still a thing? What fun stuff can I do with a laptop, a high-power adapter and a car? Maybe drive around breaking random networks?

You'd be surprised how many people still use WEP
I'd argue the better thing to do would be to host malicious wireless networks with matching SSIDs to those of near by starbucks etc. If your public transport offices free wifi then copy those SSIDs too then just drive around and wait for cell phones to automatically connect then sniff data to your hearts content.
You could do something along the same lines but more targeted by using something like karma

Interesting. I'll look into it

or vulnerable WPS APs
Haven't done it in 10+ years. I spent months tracking down a PCMCIA WiFi adapter that accepted an external antenna and had the correct chipset. Used to go around looking for networks with open JetDirect hosts on them to send random print jobs. Found a RadioShack once with unencrypted network for their internal machines, and no SMB passwords. Was able to download the files from their customer management/POS system. I don't remember putting a lot of time into it, but I did just run 'strings' against a bunch of the data files and remember getting back gems like 'internal comments' on customer records that said things like "this is the bitch that comes in every saturday morning and just stands at the counter complaining about stuff we don't even sell".
