It's not a sure-fire way to stop someone, it's just another hoop to jump through if they're not determined.

It isn't placebo, it's just an added layer. It won't stop a dedicated or experienced attacker on its own, but it will limit the casual attack.
Wpa2, per user certificates or passwords, on its own vlan, with ingress and egress rules, and as little access to the rest of your network as possible. The same for guest accounts, septate vlan, but with no access to the rest of your network.
That's how you stay safe.
Things like mac address filtering, and a disconnected honeypot network are just bonuses.

Yes, it's pretty easy to sniff out wireless traffic, grab the mac of the clients and then spoof that shit. There's no security with wireless communications
