Is embedded systems a good path to go down in C after learning the basics? I've read The C Programming Language and I want to continue with C but I don't know where to go from here.

Embedded sucks. You work with shit tools to build boring projects for shit pay (compared to other programming jobs). There are fewer jobs so it's harder to get one, and they tend to have higher requirements than other tech jobs (the "5 years experience for entry level" meme is real here). Also all your coworkers are ancient geezers. Don't fall for the meme. Just go into web dev, or data science.
