all of them. Debian netinstall lets you install a minimal system and choose a desktop environment as well. Use Xfce, Lxde or Mate, don't use Gnome, Cinnamon or KDE.
If someone tells you that Debian packages are outdated, update your repos to testing or unstable.

I would start with Linux Mint. If that runs too slow for you then try the Xfce edition. Also, when selecting software, try to choose things from the "minimalist" sections on this page: https://wiki.installgentoo.com/index.php/List_of_recommended_GNU/Linux_software

This. Most popular distros offer a flavor with a lighter DE

If you want something even more stripped down, do an arch install or an ubuntu server install and build up.

If you want something really slim, give Alpine Linux a try. Sometimes getting X working on it can be a little janky though.

I'd just like to interject for a moment. What you're referring to as Linux, is in fact, GNU/Linux, or as I've recently taken to calling it, GNU plus Linux. my celeron dual 1.6GHz // 2 gb RAM can run normindows 7 just fine

i tried linux 10years ago but being a semi-power user on windows, basically i just know my way around most configuration GUIs, just knowing nameofthing.msc to call via command instead of clicking through 5 nested GUIs at the control panel

in linux i found myself having to look up, for every god damn change, tutorials and cheat sheets that when not matching exactly what i needed, i ended up reading an entire manpage anyway, and 20 minutes later problem solved...
until next month you need it again but slightly different, and you cant just have a gui to check one different option this time, you're gonna have to read the manpage again for 20 minutes

has this changed today? which distro is or enviroment is the most configurable with GUIs? you know for everyday lil things like sharing folders with other machines, formatting an hdd, file permissions..

Arch is the fastest, least memory-intensive.
If you don't like arch, however, Lubuntu is a good choice if your PC is really old. (I'm running Lubuntu ppc on an old Powerbook G4)
If your computer is old but not too shitty then xubuntu, Ubuntu mate, or solus are good.
If you can handle it though, then just go with arch with either xfce, mate or budgie and you'll be good
