One of the Ubuntu flavors, Manjaro or Arch. I'd recommend Manjaro or Antergos. You'll have an easier time getting the programs you want. With Ubuntu you'll wind up searching for PPAs and may be faced with compiling. Manjaro/Antergos come with 'pamac', a GUI frontend for pacman and AUR. Anything you want just search it with pamac, check the box and apply. If you're worried about stability use Manjaro, they use Arch users as beta testers.

How are you watching Anime? If it's from torrents MPV or VLC are what most people use. If it's Crunchyroll you'll need to install a flash package of some kind most likely.
