Linux virgin here /g/, I was planning to install a distro on my laptop since every pc from my university uses Xubuntu and I just started learning Python, LaTeX and some other programming shit.
I want to choose between Xubuntu, Ubuntu MATE or Ubuntu since they look the more beginner friendly, which one you think will suit better for a middle to low tier laptop?

go with MATE though, the maintainers are good and its the best De imo.

16.04 is a Long Term Support release so it will get updates longer. I think for 5 years.
If all your uni machines run Xubuntu then install Xubuntu
Xfce is marginally lighter (and much better looking) than MATE, and obviously Unity is the slowest.
I would strongly recommend restricting yourself to Vim, to start of with. It works over SSH and the keybindings are very useful to know (other programs use them, including IPython Notebooks).
Once you're a bit more familiar with Linux then give i3-wm a try, it's great once you have it set up.
