I want to learn a language that can be used for everything.
Arduino, data analysis, type checking.

I use R and Python together now, but I hate dealing with two different versions of Python. I would probably call R/Python packages in Julia. Rust if it's not too much trouble.

learning ANSI C now makes no sense.
You can just continue learning C++ but i have a sneaking suspicion that C++ is completely useless today for actual development unless you learn a bunch of pseudo standard libraries like boost etc.

You probably want C++ or Rust, with C++ being much more supported for the Arduino stuff. C++ also technically has more libraries for data analysis but C++ libraries are generally a huge PITA to install and use compared to Rust crates. Rust is flat-out better at anything that has to do with types, regardless of the context.
If you learn one, picking up the other is fairly quick (I learned C++ first, from Stroustrup's book). Rust borrows some concepts from Functional languages like Haskell or ML (which I also had a background in), it is probably easier than C++ to learn as a beginner if you know these, and slightly harder or about the same if you don't. After a couple weeks you'll be at a similar level in either. Rust is definitely easier to learn at the intermediate level when you've mastered the basic stuff and need to pick up good design habits, because the compiler gives you instant feedback.
Rust is a waste of time.
If you want a general purpose language, just bite the bullet and learn C++, it will take you a long time to master it, but when you do, there's no point to any of these "Look I'm better than C*" languages.
