If your PC came with 8 or later the key is embedded on your BIOS. So you aren't going to lose it unless you reflash your BIOS. Last week I pulled the key off of this machine that has been running only Linux for years. I think the command was

sudo strings /sys/firmware/acpi/tables/MSDM

and it showed the key right there in the terminal. Any time you install windows on a machine that came with 8 or later it will just pull the product key from your BIOS so you won't even have to do anything.

I save it in a .txt and will proceed to install a windows 7 iso.
Any version will be activated or just starter edition?

Just make a backup of your Windows 10 partition because there's a chance some drivers might not work correctly on Win 7.
