Aluminum is fairly soft as far as metals go, and if you bend it, it doesn't spring back into shape, it just bends.
However, the benefit is that aluminum is highly resistant to corrosion, which makes it the most practical choice for something that's going to be in your sweaty hands/pockets all day long.
On the flip side, hardened stainless steel is damn near indestructible and would spring back into shape after being deformed, but even being "stainless", it would still corrode given high enough humidity over time. Maybe it could be used with a high enough chrome content, it's not like you'll be using your phone to cut stuff with anyway, so the rules for knifes and tools don't apply.
Plastic is generally soft, but it does spring back to shape, so it has that advantage over aluminum as well.
