I did this. For about a year, I ran with nothing but a MacBook Air and a home server. It was pretty great.
When I went back to desktop, I got an iMac. I regretted it -- not because it was a bad computer, but because I don't spend enough time at home for a desktop to be worth it. If I was doing it all from zero today, I'd do the same thing, but I'd forego a desktop altogether and get a 15" MacBook Pro and an ATX home server, instead of a 13" MacBook Air and a mini-ITX home server.

I've been working with a 13" macbook air for 4 years now and it's been great
Long lasting batteries, and replacements are very cheap (have found some 7200mah at 30€)
The integrated gpu really surprises me to this day, I've been able to play even bf3 on bootcamp
I wouldn't buy a 2016 macbook pro though, would go for a 2015 one
I went from an asus to a Macbook pro. The hardware was great but I didn't like Mac OS. Running boot camp right now.
